Vegan Creamy Ramen
You have got to try this vegan creamy ramen recipe 🍜🌱 I’ve been craving ramen so much recently and this has really hit the spot.

Serves 3-4
Ingredients:
Shredded Tofu-
1 block firm tofu
1tbs soy sauce
1tbs maple syrup
1tbs oil
Broth-
6 spring onions
few sprigs of parsley
thumb of ginger
3 cloves garlic
1bs miso paste
1tbs soy sauce
veggie stock
handful of dried shiitake mushrooms
500ml of water (use more or less to preference)
1 tin coconut milk
1 lime
To Serve:
Noodles
Pack Choi
Edamame
Vegetable Gyozas (I used Itsu frozen gyozas)
Method:
1. Shred your tofu and coat with soy sauce, maple syrup and oil. Oven bake for 20 minutes, making sure you keep stirring the tofu so it doesn’t burn.
2. Fry off your spring onion, parsley, garlic and ginger for a few minutes.
3. Add in the rest of your ingredients and let simmer for at least 10 minutes.
4. Add the juice of a lime to broth before serving.
5. Serve with noodles, shredded tofu, gyozas and vegetables of choice (I used pack choi and edamame).
